Lambrusco
di Sorbara
The DOC label of Lambrusco di Sorbara is
reserved for the sparkling wine obtained using
grapes from vines that have been recommended and/or
authorised for the province of Modena. They must
originate form vineyards which grow the following
fixed quotas:
Lambrusco
di Sorbara: 60% minimum
Lambrusco Salamino: 40% maximum
The
zone where Lambrusco di Sorbara DOC is
produced covers the entire area of Bastiglia,
Bomporto, Nonantola, Ravarino, San Prospero, in
the province of Modena, and sectors of the communes
of Campogalliano, Camposanto, Carpi, Castelfranco
Emilia, Modena, Soliera, San Cesario sul Panaro,
again in the province of Modena.
For
sale to the public, the wine must have the following
characteristics:
Sparkling
Red
· Froth: lively, evanescent
· Colour: varying shades of ruby or garnet
· Smell: pleasant, with a hint of violets
· Taste: sec or dry, medium or demisec,
amabile, sweet, refreshing, sapid and harmonious
· Minimum alcohol content: 10.50% vol.
· Minimum total acidity: 6.0 gr./lt.
· Net minimum dry extract: 18 gr./lt.
Sparkling
Rosé
· Froth: lively, evanescent
· Colour: varying shades of pink
· Smell: pleasant, fruity, distinctive
· Taste: sec or dry, medium or demisec,
amabile, sweet, refreshing, sapid and harmonious
· Minimum alcohol content: 10.50% vol.
· Minimum total acidity: 6.0 gr./lt.
· Net minimum dry extract: 16.0 gr./lt.

Salamino di Santa Croce
The DOC label of Lambrusco Salamino di
Santa Croce is reserved for the sparkling
wine obtained using grapes from vines that
have been recommended and/or authorised for
the province of Modena. They must originate
form vineyards which grow the following growth
quotas:
Lambrusco
Salamino: 90% minimum
Grapes
usedo for other Lambruscos can also be employed
in the production of this wine Ancellotta
and Fortana (called locally uva
doro, the golden grape) -
either singly up to a maximum of 10%.
The
zone where Lambrusco Grasparossa di Castelvetro
is produced covers the entire area of Cavezzo,
Concordia sul Secchia, Medolla, Mirandola,
Novi, San Felice sul Panaro, San Possidonio,
all in the province of Modena, and sectors
of the communities of Campogalliano, Carpi,
Finale Emilai, Modena and Soliera, also in
the province of Modena.
For
sale to the public, the wine must have the
following characteristics:
Sparkling
Red
· Froth: : lively, evanescent
· Colour: varying shades of ruby
· Smell: winy, intense with distinctive
fruity scent
· Taste: sec or dry, medium or demisec,
amabile, sweet, refreshing, sapid and harmonious
· Minimum alcohol content: 10.50% vol.
· Minimum total acidity: 6.0 gr./lt.
· Net minimum dry extract: 18 gr./lt.
Sparkling Rosé
· Froth: : lively, evanescent
· Colour: varying shades of pink
· Smell: pleasant, fruity, distinctive
· Taste: sec or dry, medium or demisec,

The DOC label of Lambrusco Grasparossa
di Castelvetro is reserved for the sparkling
wine obtained usin using grapes from vines
that have been recommended and/or authorised
for the province of Modena. They must originate
form vineyards which grow the following fixed
quotas:
Lambrusco
Grasparossa: 85% minimum
Grapes
usedo for other Lambruscos can also be employed
in the production of this wine Fortana
(called locally uva doro,
the golden grape) and Malbo Gentile
either singly or toghether, up to maximum
of 15%.
The
zone where Lambrusco Grasparossa di Castelvetro
is produced covers the entire area of Castelfranco
Emilia, Castelnuovo Rangone, Fiorano, Formigine,
Maranello, Marano sul Panaro, Prignano sul
Secchia, Savignano sul Panaro, Spilamberto,
sassuolo, Vignola, San Cesario sul Panaro
in the province of Modena, and sectors of
the commune of the city of Modena.
For
sale to the public, the wine must have the
following characteristics:
Sparkling
Red
· Froth: lively, evanescent
· Colour: ruby with purple edges
· Smell: winy and highly scented
· Taste: sec or dry, medium or demisec,
amabile, sweet, refreshing, sapid and harmonious
· Minimum alcohol content: 10.50% vol.
· Minimum total acidity: 5.5 gr./lt.
· Net minimum dry extract: 18 gr./lt.
Sparkling Rosé
· Froth: lively, evanescent
· Colour: varying pinkish shades
· Smell: pleasant, fruity, distinctive
· Taste: sec or dry, medium or demisec,
amabile, sweet, refreshing, sapid and harmonious
· Minimum alcohol content: 10.50% vol.
· Minimum total acidity: 5.5 gr./lt.
· Net minimum dry extract: 16 gr./lt.
